Cornbread Recipes
These
TNT (tried-and-true), time-tested cornbread recipes make use of everyday ingredients
found in the kitchen or pantry.
Creamed Corn Cornbread
2 cans cream style corn
1 c jiffy cornbread mix
(I use the whole box, not too much difference)
1 2oz.chopped and drained pimento (in small jar)
4 beaten eggs
1/3 c oil
1 c grated cheddar cheese (I use more)
1 tsp garlic powder (we use more)
Combine all except cheese, pour into sprayed casserole dish, top with
cheese. Bake 45 min. at 325.

Crock Pot Cornbread Dressing
1 (8 inch) pan cornbread (not Jiffy or sweet cornbread)
8 slices dry white bread
4 eggs
2 c. chicken broth
2 cans cream of chicken soup
1 tsp. sage
1/2 tsp. black pepper
Celery to taste
1 med. onion
2 tbsp. butter
Mix ingredients except butter. Combine in crock pot. Dot butter on top.
Cook 2 hours on High then 4 hours on low.

Mexican Cornbread Casserole
1 lb. ground beef
1/4 c. chopped onion
2 tbsp. chopped green chilies
2 eggs, beaten
1 can (1 lb.) creamed corn
2/3 c. milk
1 envelope cornbread mix
4 slices American cheese
Preheat oven to 425 degrees. Brown beef until crumbly. Drain excess fat.
Add onions and pepper. Combine eggs, 1/2 of corn and milk and add to
cornbread mix. Stir until moistened. Pour half of cornbread batter into
greased 9 inch square pan. Top with beef, cheese slices and remaining
corn. Pour other half of cornbread mixture on top. Bake for 25 to 30
minutes
