Green beans are a tradition for
Easter and other holidays. The one casserole everyone asks for is
Green Bean Casserole. My favorites are three bean salad, green
bean bundles and Pennsylvania Dutch Green Beans.
Green Bean Casserole
2 boxes frozen French style green beans (thawed)
1 med. onion, chopped
Butter
1 c. sliced water chestnuts
1 c. shredded cheese
1 can mushroom soup
1 can French fried onion rings
Sauté onions in butter. Layer in a greased casserole:
1. Beans
2. Onions
3. Water chestnuts
4. Cheese
5. Mushroom soup
6. Repeat layers Bake 25 minutes at 350 degrees or until heated through.
Add onion rings the last 5 minutes. Serves 6.

Green Bean Bundles
3 cans vertical pack green beans, drained. Last week I saw some fresh
Haricot Vert at Sam's, beautiful green beans, a little expensive, but
worth the price.
6 slices bacon
1 cup brown sugar
1 cup melted butter (I use margarine)
1/2 tsp. garlic salt
1 tsp. soy sauce
If using fresh beans, wash, cut ends from beans, arrange ten beans
together. Wrap 1/2 slice bacon around them; secure with a toothpick.
Place the bundles in a 9x13 inch casserole dish. Mix together the other
ingredients for the marinade. Pour the marinade over them, cover and
refrigerate overnight. (Spoon some of the marinade over the beans before
you bake them.) Bake 30 minutes at 350 degrees uncovered. (I baked them
longer as I like the bacon to be a little more cooked.) Makes 12
servings
Pennsylvania Dutch Style Green Beans
3 strips bacon
1 sm. onion, sliced
1/4 tsp. dry mustard
2 tsp. cornstarch
1/4 tsp. salt
1 (16 oz.) can green beans, reserve 1/2 c. bean liquid
1 tbsp. brown sugar
1 tbsp. vinegar
1 hard cooked egg, sliced (opt.)
Fry bacon in skillet until crisp. Remove bacon, crumble; set aside.
Drain off all but 1 tablespoon fat. Add onion and brown lightly. Stir in
mustard, cornstarch and salt. Add liquid from beans. Stir until mixture
boils. Blend in brown sugar and vinegar. Add beans and bacon, stir and
heat thoroughly. Turn into serving dish. May garnish with sliced egg and
crumbled bacon.
