Most of
these time-tested, TNT (tried-and-true) quick and easy salad recipes were
collected from friends and co-workers during the late 1960s and 1970s.
During these years I cut recipes for salads from magazines and off of box
tops and would take them for my lunch when teaching. Abby’s Recipe Kitchen
of Recipes presents a variety of quick and easy salad recipes that require
simple ingredients found in your kitchen. Recipes for salad include
recipes for main dish chicken salads, recipes for pasta and bean salads,
molded salads and recipes for vegetable and fruit salad dishes. The salad
and salad dressing recipes were thrown in a box and unearthed during a
move several years ago.

Lime Bavarian Salad
1 lg. box lime Jello
1 c. hot water
1 sm. pkg. instant vanilla pudding
2 c. milk
2 sm. pkg. whipped topping
1 qt. or 2 cans pears
Let lime Jell-O get syrupy. Make vanilla
pudding and add the beat in whipped topping. Then add syrupy Jell-O and
pears. Any flavor Jello can be used. Refrigerate until thickened, then
serve.
Three Bean Salad
1 (16 oz) can green beans
1 (16 oz) can kidney beans
1 (16 oz) can wax beans
1/2 Cup green pepper, chopped
1/2 Cup sugar*
2/3 Cup vinegar
1/2 Cup salad oil
1/4 Teaspoon pepper
1/4 Teaspoon salt
1/2 Cup onion, chopped
Drain the three kinds of beans and place them in a bowl. Add all
ingredients EXCEPT the onion. Mix well and chill several hours. Add
1/2 cup onion before serving.
In the 1970s I didn't worry about sugar
content but in recent years that has been changed and substitute
Splenda for the sugar.
